Shinshu
Salmon

The Shinshu Salmon used at Wachigai is nurtured in the pure, cold snowmelt waters of Mt. Kashimayari,
resulting in beautifully marbled fish with a rich yet mellow aftertaste.

Lightly searing it and finishing with nanohana (rapeseed) oil enhances its umami even further.

Our Shinshu Salmon Bowl is served with a special yuzu kosho-infused ponzu sauce for a refreshing kick.

Additionally, you can enjoy it as part of the "Mokichi Zen" set meal, a highlight of our festival feast.
